Meet farro. This ancient grain is making a comeback thanks to its rich nutrient-profile and nutty flavor. Farro is both high in fiber and protein, and has a similar flavor and texture to barley. It makes a great base for salads, soups, and more. Still not convinced that you should be adding farro to your diet? These farro recipes are both easy and healthy ways to get started with your new favorite grain.
Farro with Wild Mushrooms
“We don’t get to eat a lot of food that’s identical to what the ancient Romans would have eaten, which is one of the things that makes farro so fun,” says Chef John. “They must have had mushrooms and fermented cream back then, so it’s easy to imagine Cleopatra and Mark Antony enjoying this dish.” This dish makes a great alternative to risotto.
Caprese Farro Salad
This cool grain salad makes for an easy weeknight dinner or work lunch. Unlike other grains, farro doesn’t get soggy when tossed in dressing. Reviewer ShellyD says, “It was fantastic with the balsamic dressing I made from scratch. This was the first time I’ve used farro and it has a delicious nutty flavor on its own.”
Greek Farro Salad
“Farro is an ancient Mediterranean grain, so I wanted to merge it with a Greek-style salad that’s perfect for summertime,” says recipe creator WestCoastMom. “This is great served with grilled lamb or chicken. Add black olives or fresh herbs to your liking!”
Farro is substituted for rice in Chef John’s version of a classic Mexcian side dish. Some reviewers suggest doubling the amount of farro and broth in the recipe.
Chicken Thighs with Bok Choy and Farro
“This is a really good and essentially easy recipe for a busy weeknight dinner,” says reviewer Margaret Uchita. “The farro gave the dish body. This could be used as a vegetarian dish by substituting firm tofu for the chicken.”
Instant Pot Chicken and Farro Soup
“Chicken, farro, and a few pantry staples make this a great meal. The farro will retain some bite when cooked,” says recipe creator Bren. This hearty soup comes together in the Instant Pot in just one hour.
Farro and Lentil Masala
“This farro and lentil masala is a hearty and satisfying vegan dish with just a bit of spice,” says recipe creator Zahira Malakh. Garam masala is a traditional Indian spice blend that gives this dish a flavorful punch.
Instant Pot Farro Risotto
“The traditional Arborio rice is replaced with farro in this risotto recipe made in the Instant Pot,” says recipe creator thedailygourmet. Farro is a high-fiber and high-protein alternative to rice.
Mediterranean Farro Salad
Farro, peppers, sun-dried tomatoes, red onion, parsely, and feta cheese are tossed in a Greek vinaigrette. SunnyDaysNora says, “I even used a quick-cooking farro because that was all my grocery store had in stock and it was fabulous.”
Butternut Farro Salad with Blood Orange Vinaigrette
“This nutty farro salad is loaded with roasted butternut squash, cranberries, and toasted pecans, all topped with a tangy blood orange vinaigrette,” says recipe creator France C. “It pairs perfectly with roasted chicken or pork, yet it’s hearty enough to eat on its own for lunch.”
Crispy Farro Cakes
“By using a little egg and a touch of finely grated Parmigiano Reggiano cheese instead of a breadcrumb binder, I was able to make farro cakes that didn’t fall apart in the skillet,” says Chef John. “The key is letting the first side cook until a well-browned, crispy surface forms, then you can flip them.”
Sausage and Farro Skillet with Mushrooms and Delicata Squash
“A quick, one-pan skillet supper with Italian sausage, farro, and vegetables,” says recipe creator Diana Moutsopoulos. “I like the savory flavor that mushrooms and winter squash lend to this dish, but you could use almost any vegetables here with great results!”
Instant Pot Warm Vegetarian Farro Salad with Cauliflower, Pistachios, and Cranberries
“Try this warm vegetarian farro salad, full of Thanksgiving flavors, all done and prepared quickly in your Instant Pot,” says recipe creator Fioa. “Gourmet, simple and tasty Thanksgiving, all in one dish.”
Pesto Farro with Spring Veggies
Italian farro with pesto, asparagus, and peas. “Creamy and bursting with the fresh tastes of spring, this delicious grain bowl can be served as a vegetarian meal or as a side with your favorite protein,” says RainbowJewels.
Mushroom and Farro Soup
Farro combines with baby bella mushrooms, onions, carrots, celery, garlic, Italian seasonings, a touch of white wine, and veggie broth. You’ll add frozen peas toward the end of cooking. “A nice, warming, veggie-filled soup that makes a great weeknight meal,” says Kim.
